Giving away 12 books

Got the 12 recipes - which y'all can read in the comments, except for one super-duper family secret one that was emailed to me - so this give-away is over. Thanks!

Ladies - please email me and tell me which book you want - I may need to make adjustments based on who responded first.

I just got back some books I'd left behind in California and they are too damaged to sell - 7 copies of The Mommy Manual and 5 copies of the Mommy Survival Guide.

nothing big deal, just something that makes them no longer a "new" book.

So here's the deal: the first 12 people to send me their favorite recipe will receive one of the books - their choice as long as the choice holds out.

I will publish the 12 recipes - and will do my best to try them all on my family.

Hi Barbara! I love your books, and would love to get a copy of The Mommy Survival Guide. Our recipe is for oatrage, this deliciously decadent microwave dessert.

1 c. (2 sticks) butter, softened
1 1/3 c. oats (quick or old fashioned), uncooked
1/2 cu. Flour
1 c. packed brown sugar
2 eggs
1 tsp. Vanilla extract
1 (12 oz.) pkg. Semi-sweet chocolate morsels, divided

In a large bowl, combine butter, oats, flour, brown sugar, eggs, and vanilla. Beat 3 minutes at medium speed or until mixture is light and fluffy. Stir in 1 cup chocolate morsels. Spread butter in 8” square microwave baking dish; cover dish with waxed paper. Microwave on High for 4 minutes; rotate dish 1/4 turn and microwave on High 4-5 minutes longer or until top of cake appears dry.

Sprinkle remaining 4 oz chocolate morsels over top of warm cake. Let stand for 10 minutes, then spread chocolate evenly over cake. Cool directly on counter top. Cut into serving pieces. Makes 8-10 servings.

Well, that will bring me out of the woodwork!

BAKED CORN CASSEROLE

Preheat oven to 350 degrees
Grease 9x13

2 eggs, slightly beaten
1 cup sour cream
1/2 cup melted margarine/butter (or less)
1 16 oz can creamed corn
1 16 oz whole corn, drained (or 8 oz frozen)
1 pkg cornbread mix (or 1/2 cup cornmeal)
1 cup shredded cheddar cheese (or more)
1 4 oz can diced green chilies
1 teaspoon salt
1 tablespoon sugar

Combine everything in bowl and mix well.
Spoon into baking dish.
Bake 35-40 minutes or until golden brown.

This is mandatory at all our celebration feasts! Throw in some chopped ham or cooked bacon for a complete meal.

Not weight-loss friendly, but this is my specialty:

Chocolate chip cranberry cinnamon cookies

1/2 cup butter
1/4 cup white sugar
1/2 cup packed brown sugar
1/2 tsp cinnamon
1/2 tsp vanilla extract
1 egg
1/2 cup white flour
3/4 cup whole wheat flour
1/2 tsp baking soda
1/2 tsp salt
3/4 cup chocolate chips
3/4 cup dried cranberries

Cream together butter, sugar, and cinnamon.
Beat in vanilla and egg.
Combine flour, baking soda, and salt. Stir into sugar mixture.
Fold in chocolate chips and cranberries.
Drop onto ungreased cookie sheets. Bake at 375 for 8-10 minutes.

Easy breezy dump, bake, and serve recipe--2 tbl. apricot preserves and 2 tbl. French dressing per piece of chicken. I usually use chicken breasts, but any cut works. Mix the preserves and dressing, pour over the chicken, and bake. Rice or couscous makes a nice side for this with the extra sauce. :-)

Chicken Curry

Ingredients
1 1/2 tbsp. Olive oil
1 Small yellow onion, thinly sliced
2 tsp. Curry powder
1/2 cup Plain yogurt
3/4 cup Heavy cream
1/2 tsp. Salt
1/4 tsp. Black pepper
1 14.5-ounce Can diced tomatoes, drained (optional)
2 cups Cooked chicken, cut into bite size pieces
2 cups Cooked white rice
Peanuts

Heat oil in a large skillet over medium-low heat.

Add the onion and cook, stirring occaisonally, for 7 minutes.

Sprinkle with the curry powder and cook and additional 1 minute.

Add the yogurt and cream; simmer for 3 minutes.

Stir in the salt, pepper and tomatoes (if using).

Remove from heat and stir in chicken.

Scoop rice into bowls and pour hot chicken mixture over the top.

Sprinkle with peanuts (if using) and serve!

Tuscany Peasant Soup

1 lb. Italian Sausage Links, casings removed and cut into slices ( we use Hot Italian Sausage)
1 Onion, chopped
2-3 garlic cloves, minced
2 cans (15 oz.) cannellini beans, drained (white kidney beans- we sometimes use great Northern Beans)
2 cans chicken broth or homemade stock
2 cans diced tomatoes, undrained
2 tsp. Italian Seasoning
3 Med Zucchini, sliced
4 c. spinach leaves, chopped
shredded Parmesan or Romano Cheese
In Dutch Oven or soup pot cook sausage over medium heat til no longer pink; drain. Add Onions and garlic and saute until tender. Stir in
beans, broth, tomatoes, seasoning and zucchini. Cook Uncovered for 10 mins. Add spinach and heat until just wilted. Serve with cheese if
desired.
* Alternately: After cooking sausage, onion, garlic combine all ingredients in crockpot. Cook on low for 4 hours, add spinach just before serving.

Here's my recipe, it's sugar free, low fat and completely natural and yummy!

Frozen Banana Ice Cream Parfait
-Freeze a bunch of very ripe bananas
-Right before eating, process frozen bananas in food processor until creamy like soft serve.
-Layer it in glass with fresh berries.
-I also added in an extra middle layer of the banana ice cream processed with raspberries to make pink raspberry ice cream, but you can't see that layer in the photo.

Here's how I make my FAVORITE dinner, at least when I have to cook.

Ingredients:
1 telephone
1 fridge magnet with the number for Papa John's
1 debit card (with money in the bank)

Pick up phone and dial Papa John's. Order 1 large cheese pizza extra cheese and a 2 liter of Coke. Oh, and whatever the kids want. Pay with debit card, and give the delivery boy a nice tip. Enjoy!

This is a delicious sauce for stir fry or brushing on grilled vegetables or meat (especially pork).

2 Tbs. brown sugar
2 Tbs. orange juice (or pineapple juice)
2 Tbs. teriyaki sauce (Yoshida's is the best)
2 Tbs. ketchup

Measure ingredients into cup or small bowl. Whisk until blended. Makes 1/2 cup sauce. Can easily be doubled, tripled or quadrupled since you use the same amount of each ingredient.

I also use this sauce to marinate frozen meatballs overnight in the fridge in a large ziploc bag. Then I dump it all into a crock pot and heat it for several hours. I always get tons of compliments.

I make these dinner rolls (on average) 4-5x weekly. They are rolls AND buns.

Killer Macho Dinner Rolls

1-1/2 cups water
1/4 cup oil
2 tablespoons Honey or brown sugar
2 teaspoons salt
4 cups unbleached bread flour or whole wheat flour
2 teaspoons active dry yeast

Layer the ingredients into the bread machine pan in the order given. Set the bread machine onto the Dough Cycle. Press Start. When the dough is done mixing and rising, divide it into 16 equal pieces. Roll the pieces of dough into balls and flatten slightly. Arrange them on an oiled cookie sheet sprayed. Let them rise for about 30 minutes, or until doubled in size. Bake at 400° for about 20 minutes. Serve hot, or allow to cool and use as burger buns. I usually brush the tops of the buns with a little oil, to keep them soft. These are Fred's absolutely favorite rolls in the whole wide world. Very soft, and very good. By using this recipe to make your own burger buns, you save at least $2 per batch. Add the quality, improved flavor, and convenience of not having to go to the store, and you've got a real winner of a recipe. Makes 16 rolls.

This was one of my favorites growing up - I'm now a vegetarian, but I still sometimes crave this!

Stuffed Cabbages

By my Polish Grandmother, straight from the "old country"


2 heads cabbage

1 lb onions

¼ lb of salt pork or more

1 cup of rice (not instant)

2 lbs. of ground pork

salt to taste

2 cans of tomato soup

Cut core out of cabbage. Boil until almost done. Remove cabbage from pot and separate all leaves. On every leaf there is a hard core – cut this off. Cut salt pork in cubes and put in frying pan; when brown, remove salt pork in dish and cup up the onions and put them in the same pan until nice and brown.

Meanwhile, in another pan, boil rice until partially done. In another, larger pot, put raw ground pork. Stir in all the rice. Stir well – add salt to taste. In another large pot, line bottom with the very small leaves and line side of pot with larger damaged leaves (so the cabbage won’t burn).

Meanwhile, open tomato soup, add two cans of water and simmer. Use tablespoon to scoop meat to the cabbage. Lay cabbage flat on table. Roll long side first. Then turn two edges, and put in pot. If leaves are larger, put more meat in leaves. I usually separate the larger and smaller leaves. The large ones go in the bottom of the pot. After every row drop in a few of the salt pork pieces from the dish. If meat and little leaves are left over, put them in the pot, except open. Pour tomato soup over the cabbage until covered. Put lid on pot, place on cookie sheet lined with foil, and put in oven at about 200 degrees. Let cook about 3 to 4 hours. If boiling, open the lid a little.

It looks like I won't be among the 12, but if I were I'd love the survival manual. This is sooooo good, a breakfast favorite around here.

Baked Oatmeal
1/2 cup olive oil
3/4 cup sugar
2 large eggs
1 cup milk
1/2 teaspoon salt
1 tablespoon baking powder
3 cups uncooked oatmeal
1/2 cup raisins (or other dried fruit)
2 tablespoons brown sugar
1/2 teaspoon cinnamon

Beat together the oil and sugar. Add eggs, milk, salt, baking powder, and oatmeal. Beat well. Mix in raisins. Pour into a lightly greased pan--a pie pan or 9x9 work well. Sprinkle with the cinnamon and brown sugar. Refrigerate overnight or for a few hours. Preheat oven to 350 degrees Fahrenheit. Bake until firm, about 35 minutes. Serve hot. Really good with some milk poured over a piece.

Ok the recipe for Papa John's made me laugh out loud. That gal deserves a book just for that. Also, thank you to Misty who posted the baked oatmeal recipe! I've been looking for that one for a while!

Barbara, if you need non-chocolate or no-wheat recipes you could do another call out just for fun. No book giveaway necessary. It might be fun to do one just to spread new recipes around. Lord knows I need some new recipes around here!
