Cornbread pudding for Thanksgiving

Corn on cob.jpg This is late, but wanted to share this daughter from my dear DIL Hattie. She has brought it for every Thanksgiving dinner since she and Josh were married. It is sinfully delicious - and from the ingredients you can see why I say sinfully :)

Cornbread pudding

1 egg
1 can whole kernel corn, drained
1 can cream corn
1 stick butter
1 (8 oz.) pkg. sour cream
1 box Jiffy corn bread mix


Melt butter. Mix together all ingredients and put in a baking dish. Bake at 350 degrees for 45 minutes give or take a little.
It should be slightly brown on top and edges.

I usually double the recipe to make enough for the family, and that can extend the cooking time.
