Cornbread pudding for Thanksgiving
My dear DIL Hattie has brought this dish for every Thanksgiving dinner since she and Josh were married. It is sinfully delicious - and from the ingredients you can see why I say sinfully :)
Cornbread pudding1 egg
1 can whole kernel corn, drained
1 can cream corn
1 stick butter
1 (8 oz.) pkg. sour cream
1 box Jiffy corn bread mix
Melt butter. Mix together all ingredients and put in a baking dish. Bake at 350 degrees for 45 minutes give or take a little.
It should be slightly brown on top and edges.
I usually double the recipe to make enough for the family, and that can extend the cooking time.
