Beyond Leftovers

In my ongoing effort to become a better steward, I've discovered that you can make masterpieces with leftovers just by starting with butter, onions and garlic.

Last night's creation was really gorgeous, so I had to take a picture. Started with the sauteed onion and garlic. Added chopped up steak, potatoes (white, blue and red gourmet mix from Costco), and spinach from the night before. Also added rice, black beans and broccoli from a couple nights before. And finally, some shredded carrots.

Ten ingredients - and check out the colors! And what do you think: is there anything butter, onions and garlic can't make taste great?

By the way - that's my favorite skillet, seasoned with 20 years of mega-meals.

you are so right! I love to cook and spend a lot of my time and energy creating meals for my family and others. On Thanksgiving, no matter where we live, I always seem to have a houseful of guests. I start my stuffing early, around 5 am, by sautéing onions, garlic and celery in butter. That'ts it, nothing fancy, but every year, everyone who wakes up to the smell of this tells me they smell something wonderful cooking and they can't wait for dinner! This has always been my secret. For any dinner party where I am trying to impress I sauté some onions and garlic to "season" the house, even if they aren't part of the dish. Sort of like baking cookies to sell a house.

When I do this kind of leftover cooking, I call it "stuff in a pan" and it's usually so good, but then I can't recreate it for another time!

That's looks absolutely gorgeous! Being a southerner, every meal we have starts with onions, garlic, bell pepper, and now, celery.

I tell my children I put onions in everything they eat!! LOL Instead of butter, I prefer extra virgin olive oil. I save my butter for fresh baked bread!! yumm!!

PS try transforming your left overs into soup. It's so good, nutritious and filling. :)
